Ingredients
For Carrots:
- 1 lb heirloom carrots rainbow mix
- 2 teaspoons extra virgin olive oil
- 1 teaspoon salt
- Salt and pepper to taste
For the Sauce:
- 1 tablespoon Grassland unsalted butter
- 1 ½ tablespoons honey
Instructions
For Carrots:
- Preheat the oven to 400 degrees, and line a large baking sheet with parchment paper.
- Coat the carrots in olive oil and salt, and spread them in a single layer onto pan. Roast for 35-40 minutes until tender. Turn halfway through cooking, about 20 minutes to roast both sides evenly.
- Move carrots to a long serving dish.
For the Sauce:
- In a small skillet over medium heat, melt the butter and cook until golden. Remove from heat, and stir in the honey. Mix well.
- Toss carrots in sauce. Add salt and pepper to taste. Serve hot.
