Roasted Heirloom Carrots

Ingredients for carrots:
1lb heirloom carrots, rainbow mix
2 teaspoons extra virgin olive oil
1 teaspoon salt
Salt and pepper to taste

Ingredients for sauce:
1 tablespoon Grassland unsalted butter
1 ½ tablespoons honey

Instructions for carrots:
Preheat the oven to 400 degrees, and line a large baking sheet with parchment paper.

Coat the carrots in olive oil and salt, and spread them in a single layer onto pan. Roast for 35-40 minutes until tender. Turn halfway through cooking, about 20 minutes to roast both sides evenly.

Move carrots to a long serving dish.

Instructions for sauce:
In a small skillet over medium heat, melt the butter and cook until golden. Remove from heat, and stir in the honey. Mix well.

Toss carrots in sauce. Add salt and pepper to taste. Serve hot.
