Toasted Marshmallow Buttercream Frosting

2 sticks Grassland butter, softened
4 cups powdered sugar
2 tablespoons milk
10 ounces mini marshmallows (16 oz in a regular-sized bag)

Add Grassland butter into a standard mixer, and beat until smooth. Slowly add in powdered sugar, mixing in between. Add milk and continue mixing until smooth.

Turn the oven on broil. Line a baking sheet with parchment paper and spread mini marshmallows in an even layer. Place under the broiler for about 30-45 seconds until they are browned and puffed. (Warning: Keep an eye on them – they will burn very quickly!)

Immediately add the marshmallows into the butter mixture and beat until smooth.

Allow frosting to cool completely before spreading or piping.

When cool, transfer the mixture to a piping bag to add to your favorite treat. We tried oatmeal raisin and double chocolate chunk cookies.
