Cheesy Avocado and Beef Quesadilla

Materials

  • 2 tbsp Grassland butter
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1 can refried beans
  • 2 small avocados, peeled and cut into chunks
  • 2 cups shredded mozzarella cheese
  • Fresh cilantro leaves, chopped
  • 4 flour tortillas

Instructions

  • Heat grassland butter on a skillet over medium heat. Add ground beef. Once beef is browned, add taco seasoning and put aside.
  • Heat Grassland butter on a separate skillet over low-medium heat and place your flour tortilla on the pan. While tortilla is browning, assemble your quesadilla starting with the refried beans, to beef, to avocado, to mozzarella cheese.
  • Once assembled, flip one side of the quesadilla over to create a fold. Let cook on its side. Once you see the cheese start to melt (4-6 minutes), flip the quesadilla over and let the other side cook. 
  • Once the bottom side is down and the tortilla is browning, remove from heat.
  • Place on a serving dish and cut each tortilla into three pieces. Top with cilantro to create an easily shareable and delicious quesadilla.
