Banana and Rolled Oat Pancakes

Materials

  • 2 ripe bananas
  • 2 eggs
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • 1 ½ cups rolled oats
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 3 tbsp Grassland butter

Instructions

  • Add all ingredients besides Grassland butter to a blender or food processor. Combine til completely smooth with no lumps.
  • Coat a skillet with Grassland butter over medium heat. Add1/3 cup of batter from blender to griddle to create each pancake. Cook 3-4 minutes on each side until pancakes start to puff up and the edges start to harden. Once cooked, remove from heat.
  • Repeat with remaining batter until pancake mixture is gone.
  • Top with blueberries, bananas, pecans, and syrup. Serve immediately.
