Pancake Tacos

Materials

  • 1 ½ cups all-purpose flour
  • 3 ½ tsp baking powder
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 ¼ cups milk
  • 1 egg
  • 3 tbsp butter, melted

  • We chose greek yogurt, ricotta cheese, blackberries, blueberries, and strawberries. Try different variations of yogurts and toppings for your perfect pancake tacos.

Instructions

  • In a large bowl, combine flour, baking powder, salt and sugar. Make a hole in the center and pour in the milk, egg and melted butter. Mix until smooth
  • Heat a frying pan over medium-high heat. Pour the batter onto the griddle using a ladle. Spread batter to at least 4 inches around to create a pancake similar to a tortilla. Brown on both sides.
  • To serve, spoon yogurt on the center of each pancake. Top with fresh fruit. Fold pancakes in half, and serve like tacos.
