- 1 ½ cups all-purpose flour
- 3 ½ tsp baking powder
- 1 tsp salt
- 1 tbsp white sugar
- 1 ¼ cups milk
- 1 egg
- 3 tbsp butter, melted

Instructions
- In a large bowl, combine flour, baking powder, salt and sugar. Make a hole in the center and pour in the milk, egg and melted butter. Mix until smooth
- Heat a frying pan over medium-high heat. Pour the batter onto the griddle using a ladle. Spread batter to at least 4 inches around to create a pancake similar to a tortilla. Brown on both sides.
- To serve, spoon yogurt on the center of each pancake. Top with fresh fruit. Fold pancakes in half, and serve like tacos.
