Roasted Heirloom Carrots

Materials

For Carrots:

  • 1 lb heirloom carrots rainbow mix
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon salt
  • Salt and pepper to taste

For the Sauce:

  • 1 tablespoon Grassland unsalted butter
  • 1 ½ tablespoons honey

Instructions

For Carrots:

  • Preheat the oven to 400 degrees, and line a large baking sheet with parchment paper.
  • Coat the carrots in olive oil and salt, and spread them in a single layer onto pan. Roast for 35-40 minutes until tender. Turn halfway through cooking, about 20 minutes to roast both sides evenly.
  • Move carrots to a long serving dish.

For the Sauce:

  • In a small skillet over medium heat, melt the butter and cook until golden. Remove from heat, and stir in the honey. Mix well.
  • Toss carrots in sauce. Add salt and pepper to taste. Serve hot.
