Cowboy Butter Sauce
Slather this on anything moving.

- 2 sticks of unsalted Grassland Butter melted
- Juice of 1/2 lemon
- 2 cloves of garlic minced
- 1 small shallot minced
- 2 tablespoons of Dijon mustard
- 1 teaspoon of prepared Horseradish
- A pinch of Cayenne pepper
- 1/4 teaspoon of Paprika
- 2 teaspoons of chopped parsley
- 1 teaspoon of freshly chopped chives
- 2 teaspoons of minced Thyme
- Kosher salt to taste
- Freshly ground black pepper to taste
Melt 2 sticks of butter in a saucepan.
Combine lemon juice, garlic, shallot, mustard, horseradish, cayenne, and paprika. Whisk.
Stir in parsley, chives and thyme. Season with salt and pepper.
Serve with grilled meats, potato wedges or cornbread.
