Toasted Marshmallow Buttercream Icing

Materials

  • 2 sticks Grassland butter softened
  • 4 cups powdered sugar
  • 2 tbsp milk
  • 10 ounces mini marshmallows (16 oz in a regular-sized bag)

Instructions

  • Add Grassland butter into a standard mixer, and beat until smooth. Slowly add in powdered sugar, mixing in between. Add milk and continue mixing until smooth.
  • Turn the oven on broil. Line a baking sheet with parchment paper and spread mini marshmallows in an even layer. Place under the broiler for about 30-45 seconds until they are browned and puffed. (Warning: Keep an eye on them - they will burn very quickly!)
  • Immediately add the marshmallows into the butter mixture and beat until smooth.
  • Allow frosting to cool completely before spreading or piping.
  • When cool, transfer the mixture to a piping bag to add to your favorite treat. We tried oatmeal raisin and double chocolate chunk cookies.
