2 sticks Grassland Unsalted butter – chilled, cut into 1 inch pieces
2 ½ cups all-purpose flour
7 tablespoons ice water
1 tablespoon cider vinegar
½ teaspoon salt
Combine flour, salt, and Grassland butter in a food processor. Pulse until mixture is crumbly, about ten pulses.
Stir water and vinegar in a small bowl.
Pour half of the water and vinegar mixture into the flour mixture. Pulse to combine, about four pulses. Pour in remaining water mixture. Pulse until mixture just starts to come together, about 8-10 pulses.
Move dough out onto a wooden surface, form into a round shape and divide in half. Form each half into a disc.
Wrap each disc in plastic wrap and refrigerate for at least 30 minutes until ready to use.
